Rust can form on the griddle cooking surface if the steel is able to interact with oxygen and water. This is also known as oxidation. The oxidation process can happen if there is a break or fault in your griddle seasoning or if water is able to sit on the griddle cooking surface for a prolonged period. The best way to prevent rust is to have a good seasoning layer on your griddle top. When seasoning the griddle cooking surface, you bake oils into the griddle cooking surface, which creates a new polymer on the steel to lock out oxygen and water. We recommend the following oils for seasoning purposes: olive oil, vegetable oil, canola oil, coconut oil and sesame oil. Lard can also be used to season the griddle top.

Grease cutting dish detergents will erase the seasoning on the griddle cooking surface, so we do not recommend ever using soap on your griddle cooking surface after it has been seasoned. Season is a continuous process. Over time and the more often you season your griddle cooking surface, the more shiny, non-stick it will become.

We recommend coating the griddle cooking surface in a light layer of vegetable oil before storing it for a long period of time. This will prevent rust and any residue from collecting on the griddle cooking surface. Make sure to use a fabric cover and store it in a dry place. When taking the griddle out of storage, wipe oil off with a paper towel.

Not to worry, it is normal for the griddle cooking surface to change color over time.
