Ingredient List

MAIN

Eye of Round Beef Roast – 6lb
Parsley – ¾ cup finely chopped
Thyme – 3 tbsp finely chopped
Rosemary – 3 tbsp finely chopped
Extra Virgin Olive Oil – 1/8 cup
Salt and Pepper – To taste


CREAMY HORSERADISH

Sour Cream – 1 cup
Prepared Horseradish – 1/4 cup
Worcestershire Sauce – 1 tbsp
Salt – 2 tsps.
Pepper – 2 tsps. 


Cooking Instructions

  1. Pre-heat grill to high heat setting.
  2. Combine finely chopped parsley, thyme, rosemary, olive oil, salt, and pepper in a bowl.
  3. Coat roast in herb mixture.
  4. Sear all sides of the roast then reduce heat to a low setting.
  5. Cook the roast low and slow for approximately 1 hr 25mins or until you reach an internal temperature of 125-130°F for medium-rare.
  6. Combine sour cream, prepared horseradish, Worcestershire, salt, and pepper in a small bowl and place in the fridge until ready to serve.
  7. Let your roast rest for 25 mins and serve with creamy horseradish sauce. 

Cooking Tips

  1. Be sure to bring your round roast up to room temperature before grilling.
  2. Let the meat rest! You may be tempted to dig right in once they’re done, but let them rest for a few minutes to lock in those juices.
