Manuals & Guides

If rust appears on the griddle cooking surface, rub it off with steel wool or low grain sandpaper and re-season the surface. Take care to always completely dry your griddle before storing and keep away from rain and sprinklers. * CUSTOMERS IN HUMID OR COASTAL CLIMATES MAY REQUIRE MORE FREQUENT SEASONINGS AND THE USE OF HEAVIER COOKING OILS TO AVOID RUSTING AND CORROSION.* Please refer to the "Seasoning of Griddle" section of the Installation Guide for more information. Alternatively, you can access the installation manual on the NewAge Products website: https://newageproducts.com/support-hub/
Rust can form on the griddle cooking surface if the steel is able to interact with oxygen and water. This is also known as oxidation. The oxidation process can happen if there is a break or fault in your griddle seasoning or if water is able to sit on the griddle cooking surface for a prolonged period. The best way to prevent rust is to have a good seasoning layer on your griddle top. When seasoning the griddle cooking surface, you bake oils into the griddle cooking surface, which creates a new polymer on the steel to lock out oxygen and water. Please refer to the "Seasoning of Griddle" section of the Installation Guide for more information. Alternatively, you can access the installation manual on the NewAge Products website: https://newageproducts.com/support-hub/
We recommend the following oils for seasoning purposes: olive oil, vegetable oil, canola oil, coconut oil and sesame oil. Lard can also be used to season the griddle top.
Grease cutting dish detergents will erase the seasoning on the griddle cooking surface, so we do not recommend ever using soap on your griddle cooking surface after it has been seasoned. For tough food caked on to the griddle cooking surface, use table salt and hot water and gently scrub using non-abrasive scrubber. Make sure to fully dry off the griddle cooking surface and coat with oil after scrubbing. Please refer to the "Cleaning & Maintenance" section of the Installation Guide for more information. Alternatively, you can access the installation manual on the NewAge Products website: https://newageproducts.com/support-hub/
Season is a continuous process. Over time and the more often you season your griddle cooking surface, the more shiny, non-stick it will become.
We recommend coating the griddle cooking surface in a light layer of vegetable oil before storing it for a long period of time. This will prevent rust and any residue from collecting on the griddle cooking surface. Make sure to use a fabric cover and store it in a dry place. When taking the griddle out of storage, wipe oil off with a paper towel.
Not to worry, it is normal for the griddle cooking surface to change color over time. Overheating or allowing cookware to boil dry can cause yellow, brown, dark purple, blue or rainbow tints on the stainless steel surface. Although harmless, these tints can spoil the appearance of the griddle cooking surface. To remove this discoloration, use vinegar-baking soda paste. Simply use a 2:1 ratio of vinegar to baking soda. This means to use two parts vinegar for every one part of baking soda. Mix them into a paste, and then apply the paste to the stained metal and gently scrub using a non-abrasive cleaning pad.
The griddle cooking surface need to be preheat for approximately 5 to 10 minutes with the griddle in place. This will ensure that the griddle cooking surface is hot enough to start cooking. Do not preheat on high!

Here are our recommended heat settings:
• LOW: for warming and simmering foods.
• MEDIUM: for cooking foods like eggs, sandwiches, and pancakes and for reducing stocks and gravies.
• MEDIUM-HIGH: for frying, sautéing, searing meats and vegetables, and for stir-frying.
• HIGH: For boiling liquids only. Do not heat empty cookware on high!
Seasoning builds up layers of polymerized oil and improves performance by creating a stick-resistant cooking surface. This process takes time, so give yourself a few hours to complete it before you cook. Please refer to the "Seasoning of Griddle" section of the Installation Guide for more information. Alternatively, you can access the installation manual on the NewAge Products website: https://newageproducts.com/support-hub/

Only, use metal cooking utensils on the stainless steel griddle cooking surface.
Almost anything! Here is a sampling of some of our favorites:
• Bacon, Eggs, Omelets, Pancakes, Sausage, French Toast, and Hash Browns
• Stir Fry, Mongolian BBQ, Teppanyaki and Fried Rice are all excellent on a griddle, and are easier to cook on a griddle than on a conventional skillet.
• Sandwiches: Grilled cheese, paninis, Reuben Sandwiches, avocado melts, cheese steaks.
• Burgers: Sliders are terrific on the griddle, and the entire meal (burger, grilled onion, and bun) can be cooked on the griddle simultaneously.
• Seafood: Many flaky fish that are difficult to cook on a grill due to flaking are perfect on a griddle. Small seafood like shrimp or calamari griddle beautifully, and griddles put a perfect sear on rare tuna and scallops.
• The list goes on and on and on....
