MAIN

Flank Steak – 2 lbs


CHIMICHURRI MARINADE

1 ¼ cups Cilantro
1 cup Parsley
5 cloves Garlic
2 tbsps. Crushed Red Peppers
¾ cup Extra Virgin Olive Oil
3 tbsps. Apple Cider Vinegar
Salt and Pepper – To taste


SIDES

Small Flour Tortillas – 16
Grilled Red Onion Slices – 2 red onions
Grilled Corn cut off Cobb – 4 cobs of corn
Sour Cream – Garnish
Cilantro – Garnish 


Cooking Instructions

  1. In a food processor or blender combine all chimichurri marinade ingredients and blend until smooth.
  2. Pour marinade over flank steak and refrigerate overnight or 8-10 hours.
  3. Pre-heat grill to medium to high heat.
  4. Grill flank steak for 6/7 mins per side until an internal temperature of 130-135°F for medium rare is reached.
  5. Allow steak to rest 10-15mins.
  6. While resting, lightly grill tortillas on a low heat setting for 30 secs per side.
  7. Prepare desired taco toppings. Common favorites are sliced grilled red onions, charred corn on the cobb, sour cream and cilantro.
