Ingredient List

MAIN

Portobello Mushrooms, stems removed – 8
Spanish Onion – 1 medium sized finely diced
Bell Pepper – 2 finely diced
Black Beans – 1-15 oz can
Corn kernels – 1 – 15 oz can
Taco Seasoning – 1 pkg
Pre Shredded Cheese – 1 ¼ cup
Cilantro – Garnish
Sour Cream – Garnish 


Cooking Instructions

  1. Combine diced onions, peppers, black beans and corn kernels in medium sized bowl.
  2. Mix with taco seasoning, salt and pepper.
  3. Place mixture on stovetop at a medium heat level, gently sauté until onions are translucent approximately 4 minutes.
  4. Divide the mixture evenly into all 8 mushroom caps.
  5. Preheat grill and keep at a low heat setting to just gently soften the mushroom caps.
  6. After approximately 6 or 7 minutes when you start to see them soften, top with shredded cheese, and continue to heat until melted.
  7. Once melted, take off grill and top with cilantro leaves and a dollop of sour cream. 

Cooking Tips

  1. To keep the mushrooms from going soggy, do not rinse them under weather beforehand. Instead, use a damp cloth to wipe them clean.
