Ingredient List

MAIN

8 Whole Wheat Burger Buns
2 x 15 oz can Green/Brown Lentils
1/4 cup Full Fat Yogurt
1 cup Cremini Mushrooms, diced
1/8 cup All Purpose Flour
3 cloves Garlic, finely chopped
2 tbsps. Extra Virgin Olive Oil
1 tsp Paprika
2 lemons Lemon Juice and Zest


MANGO SALSA

2 Mango, finely diced
1/2 Red Onion, finely diced
2 Jalapeño, no seeds, finely diced
1/4 bunch Cilantro, chopped
2 limes Lime Juice and Zest 


Cooking Instructions

  1. Gently pulse all ingredients together using a food processor, take out and form a ball.
  2. Halve the ball and divide each half into 4 patties, making 8 patties.
  3. Chill formed patties for 6-8 hours until firm, this makes grilling much easier.
  4. Preheat grill to a medium setting and cook each side 7 minutes. When almost complete add the buns on the top rack for toasting, if desired. Remove both from heat and set aside.
  5. Add mangos, red onion, jalapeños, cilantro, and lime juice to a small bowl. Chill for 2-3 hours before serving.
  6. Spread mayonnaise on bottom bun, top with lentil patty and mango salsa. 

Cooking Tips

  1. You can replace canned lentils with dry, cooked lentils as well!
